Plantain Frittata

Believe me you'll love this. Plantain is that food item that never goes wrong. If you don't like plantain, like are you even from this planet? Okay just kidding but as a matter of fact, plantains are close to the heart.

Personally i love them in any form; boiled, fried, roasted, pottage form (if you want to know how this is made, drop hints in the comment section 😁) ,chipped, baked, burnt. Okay scratch out the last part, if you burn my plantains, we are over.


A common favourite breakfast idea in this part of the world is fried plantain and eggs. It's a combo that is just meant to be, a quickie and tasty as well.  However, today we'll be learning a more nutritious, tantalizing, surprisingly lighter and tasty form of this meal. This is the plantain frittata. Even the name sounds tasty.. Lol.
                 



INGREDIENTS

  • 2-3 ripe plantains
  • 1 tablespoon oil
  • 1/2 medium onion thinly sliced
  • 1 scotch bonnet pepper diced 
  • ½ red/green bell pepper thinly sliced in strips
  • 1 small tomato
  • 1 teaspoon minced garlic
  • 1 teaspoon Fresh thyme or any other herb
  • Salt and ground pepper
  • 6 large eggs
  • 1/2 -1 cup sausage chopped.                                                                                            INSTRUCTIONS.                                                   

  • Preheat oven to 350 degrees F. Grease a 10- inch baking pan or muffin pan, set aside.
  • Using a knife cut both ends off the plantain. Slit a shallow line down the long seam of the plantain, peel only as deep as the peel. Slice the plantains into desired shape and size
  • Place them on the baking sheets in a single layer; spray oil lightly over the plantains and bake, turning over slices, after 8 minutes for about 12- 20 minutes or till golden brown, depending on your oven.
  • While the plantain is baking, heat a medium sauce pan over medium heat and drizzle with 1 Tablespoon of oil. Add the onions, tomatoes, green pepper and cook for about 4-5 minutes. (i.e sauté it)
  • In a large bowl whisk eggs, add sauté vegetable mixture, season with salt and pepper according to preference.
  • Pour mixture into the greased 10-inch baking pan. Layer the baked plantains.
  • Bake in the oven for about 30-40 minutes; until mixture is firm in the center.
  • Let it cool for a few minutes; Ready to eat😁
