Recipe For White Soup

This is a soup popular among the ibos in the eastern part of Nigeria. It is an assorted meal which is used to mark special occasions or when a pregnant woman gives birth.

It is also traditionally called ofe nsala and it is a very easy soup to make if you know what you are doing.
Ingredients:
1 kilo of chicken.
Dried fish ( optional)
1 or 2 wraps of IBO ogiri
Utazi leaves
Uziza seeds,cray fish
Salt, onion
Pepper
Maggi
Corn flour.

Preparation:
Boil your chicken until tender with seasoning of your choice and onions.
To the chicken add the dried fish
Add your grounded Utazi seeds
Add your Uziza leaves.
Open your wraps of ogiri and add as much as you want.
Add salt, pepper, crayfish and maggi to taste.
Allow to simmer for 3 mins.
Dissolve your cornflour in a bowl of water and add to the soup. Leave to boil until it had thickened abit.
Serve with any swallow of your choice( preferably pounded yam).
