Pancakes
Yes you heard me, pancakes are easy and fast to prepare contrary to the thoughts harboured by many people.
A pancake is a flat cake often thin and round prepared from a starch based batter that may contain eggs, milk and butter and cooked on a hot surface such as a girdle or frying pan often frying with oil or butter.
Growing up, mum rarely prepared pancakes so whenever i got to eat it, it felt special like i was eating dominos pizza or something. Don't get me wrong pancakes serve as a special meal especially when well prepared but I'm saying if you have a mum like mine who is not a fan of flour meals or ‘oyinbo food' like some African Mothers would call it, worry no more, you are about to learn how to prepare that flat round fluffy goodness😋.
So goodbye to cravings that never get satisfied.
Nowadays, it's preparation has been made relatively easy with the emergence of pancake mix. However, mixing the ingredients yourself from scratch would give you the opportunity to make it to your taste. For example some would want less sugar, no egg at all and other specifications you might have.
Below is a quick and easy recipe for one of the best pancakes you can get anywhere in the world.
Ingredients
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
3/4 cup milk
1/4 cup butter, melted
Directions
*In a small bowl, combine flour, sugar, baking powder and salt.
(Author's note: Always combine the dry ingredients first )
*Combine egg, milk and shortening; stir into dry ingredients just until moistened.
(Author's Note: Wet ingredients should be added by making a well at the center of the dry ingredients and adding in gradually)
*Pour batter by 1/4 cupfuls onto a greased non sticky frying pan.
(Author's Note: Oil or butter can be used for frying)
*Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
Pancakes can be thin or thick, this depends on the thickness of the batter. Less liquid if you want it thick and more if you prefer it thin.
